TANTIE baobab powder is the dried pulp of the baobab fruit, monkey bread, known as bouye in Senegal. Nothing else in the bag: 100% fruit pulp. It is used above all to prepare bouye juice, and its tangy taste also lifts yoghurts and desserts. 200 g bag.
What is baobab powder?
The fruit of the African baobab (Adansonia digitata) holds a naturally dry, creamy white pulp, surrounding the seeds. Separated from the seeds and sieved, it produces this fine powder with a tangy, slightly lemony taste. In Wolof, the fruit is called bouye and the tree gouye; in French, it is called pain de singe. Not to be confused with lalo, the baobab leaf powder used to thicken sauces.
How to use it?
- For bouye juice, dilute 60 g of powder and 50 g of sugar in 1 litre of water, mix well, then leave to rest for 1 hour in a cool place. One bag makes about 3 litres. Many people add milk, vanilla or orange blossom water. The juice keeps for 3 days in the refrigerator.
- For ngalakh, the Senegalese Easter dessert, it is mixed with peanut paste and thiakry, the millet couscous.
- Day to day, one to two teaspoons in a yoghurt, a compote or a smoothie add a touch of tanginess.
What to pair it with?
