What are baobab pieces?
The baobab fruit, called monkey bread in English or bouye in Wolof, contains a naturally tangy white pulp, surrounding hard, dark seeds. TANTIE sells it dried, in pieces ready to dissolve. In the European Union, dried baobab fruit pulp has been authorised as a novel food ingredient since 2008.
How to prepare bouye juice?
Mix the pieces with water until the pulp is fully dissolved, then strain to remove the fibres and seeds. Sweeten to taste and serve chilled. The pieces can also be sucked directly, like sweets.
