What is baobab concassé?
The fruit of the baobab (Adansonia digitata), called bouye in Wolof or monkey bread in French, grows almost everywhere in Senegal and the Gambia. Its pulp, naturally dry and powdery inside the shell, is here crushed into pieces rather than reduced to a fine powder. Baobab fruit pulp has been authorised as a food ingredient in the European Union since 2008.
How to use it?
To prepare bouye juice, mix the concassé with water until the pulp fully dissolves, then strain to remove the seeds and fibres. Sweeten to taste, or flavour with vanilla before serving chilled. The rehydrated pulp can also be stirred into a yoghurt, a smoothie or a pastry for a tangy note. The dry pieces can also be snacked on as they are, like a treat.
