What is moringa seed?
Moringa is a tree native to the Indian subcontinent, now widely grown in West Africa, particularly Senegal. It is called nébéday in Wolof, zogalé in Hausa and n'saye in Bambara. The seed is enclosed in a light brown shell that must be broken to extract the white kernel, with a bitter taste that leaves a slightly sweet note at the end of chewing, close to roasted chickpea.
How to eat moringa seed?
- Crack the shell between your fingers or with a nutcracker to remove the white kernel.
- Chew one to two kernels slowly, plain or lightly dry-roasted for a few minutes in a pan.
- Increase the amount gradually to get used to the pronounced, bitter taste.
