What is ras el hanout?
A Maghrebi spice blend whose name means "head of the shop" in Arabic: each grocer made his own, so there is no fixed recipe. SAMIA’s is fragrant and warm rather than hot; add it at the start of cooking to a tagine or sprinkle it over couscous.
Orange blossom flavouring or orange blossom water: what is the difference?
The SAMIA flavouring is water flavoured with orange blossom. Orange blossom water is distilled from the flowers of the bitter orange tree: a different product, more expensive and more delicate in scent. The flavouring works very well in pastries and mint tea.
