SAMIA red raz el hanout is a Moroccan spice blend dominated by sweet pepper, hot chilli and turmeric, which give it its orange-red hue and a spicier taste than the classic version. It flavours tagines, couscous and marinades. 100 g bag.
What is raz el hanout?
“Raz el hanout” (also written “ras el hanout”) literally means “the top of the shop” in Arabic: traditionally, the best spice blend offered by a grocer. There is no single recipe: each merchant or brand composes their own blend, sometimes from around twenty spices. The SAMIA red version is made of sweet pepper, salt, cumin, cayenne, turmeric, black pepper, mustard, fenugreek, coriander, hot chilli, ginger, fennel and garlic: it is the warm-toned spices (sweet pepper, cayenne, turmeric) that dominate and give the blend its colour, deeper than that of the SAMIA classic raz el hanout.
How to use it?
Add a teaspoon of red raz el hanout at the start of cooking to a lamb or chicken tagine, with the sliced onion, before adding the meat: the spices then infuse during cooking. It also flavours the broth of a Moroccan couscous, a marinade for skewers (mixed with olive oil) or oven-roasted vegetables. Taste before adding more: the blend contains hot chilli and cayenne pepper in addition to sweet pepper.
What to pair it with?
With SAMIA tagine spices or SAMIA sweet paprika to deepen the colour of a dish, and with the blog recipes for Moroccan tagine and chicken couscous. The Moroccan and Maghrebi cuisine category brings together the spices from the same range.
