ORCHIDÉE twice-broken rice is a jasmine rice whose grains have been broken twice: they are short, soak up the sauce and give thiéboudienne its texture. It is the rice of Senegalese cuisine, even though it grows in Asia. 1 kg bag.
What does “twice-broken” mean?
Broken rice is not a variety: these are long grains fragmented during milling, then sorted by the size of the fragments. Broken once, the grain stays large; broken twice, it is smaller, cooks faster and soaks up sauce. The packaging carries the mention “jasmine fragrant rice broken twice” and the commercial grade A1 Super.
An Asian rice, a Senegalese cuisine
Broken rice arrived in Senegal through colonial trade and became the base there for thiéboudienne, the fish and rice dish, then for thiébou yapp and riz gras. This one is a superior-quality jasmine rice, broken twice; it is not grown in Senegal.
How to cook it?
Rinse it, then steam it above the sauce, the Senegalese way, or cook it in water, allowing a little less water than for a whole grain rice, as the fragments absorb quickly. Taste at the end of cooking: it should stay soft, without becoming sticky.
What to serve it with?
With the fish and vegetables of thiéboudienne, a peanut sauce made with BONMAFÉ peanut paste, or a JUMBO fish stock. Senegalese cuisine has its own category.
