DAKATINE is a smooth peanut paste, made from 97.5% roasted peanuts, with no added sugar. It is the tin you open for a mafé, a peanut sauce or a ndolé, and that you also spread on bread at breakfast. 425 g tin, made in France.
What is DAKATINE?
Its name blends Dakar and the French word tartine. The brand has existed since the 1960s and is made in Strasbourg: it is not a Senegalese brand, but it really is the peanut paste of West African kitchens, and of Réunion, where its name has passed into everyday language to mean any peanut paste. Its composition fits on one line: roasted peanuts (97.5%), emulsifier of vegetable origin (E471), salt. The emulsifier limits the oil rising to the surface.
Is DAKATINE peanut butter?
Yes and no. Like peanut butter, DAKATINE is made from roasted, ground peanuts. But, unlike many American-style peanut butters, it contains no added sugar: it is made for savoury cooking, where it is stirred into a sauce, even though it spreads very well. That is what brings it close to other African-style peanut pastes, such as BONMAFÉ, and sets it apart from sweet spreads.
What is DAKATINE made of?
Three ingredients, according to the label: roasted peanuts 97.5%, emulsifier of vegetable origin (E471) and salt. No added sugar, no added oil. Per 100 g, the label shows 625 kcal, 51.4 g of fat, 9.3 g of carbohydrates of which 5.9 g of sugars, which come from the peanuts, 8.4 g of fibre, 27.2 g of protein and 0.5 g of salt.
How to use it?
- Mafé (Senegal, Mali): allow about 250 g of paste for 1 kg of meat. Thin it in 50 cl of lukewarm water, pour into the tomato sauce, then leave to simmer. The beef mafé recipe is on the blog.
- Peanut sauce from Côte d'Ivoire or Cameroon: same principle, with chicken, smoked fish or vegetables, as in the traditional peanut sauce.
- Cameroonian ndolé: the peanut paste binds and softens the bitter leaves of ndolé.
- Senegalese ngalakh: the Easter dessert made with millet and baobab.
- On bread, quite simply.
Stir the paste before using it, and always thin it in lukewarm water, a little at a time: poured all at once into cold water, it forms lumps. A 425 g tin is enough for a large family mafé.
What to pair it with?
