The NKOSI Senegalese mafé kit brings together 6 products to cook mafé, the peanut stew born in Mali and now a classic of West African cuisine. It contains the peanut paste, tomato concentrate, rice, stock, bay leaves and chilli needed for the sauce; the meat and fresh vegetables are left to add.
What's in the mafé kit?
- 1 DAKATINE peanut paste, 425 g
- 1 DIEG BOU DIAR double tomato concentrate, 400 g
- 1 ORCHIDÉE 1-time broken rice, Thai jasmine rice, 1 kg
- 1 JUMBO powdered beef stock, 1 kg
- 1 SAMIA bay leaves, 20 g
- 1 SAMIA ground hot chilli, 100 g
What is mafé?
Mafé, also called tigadèguèna, is a stew born in Mali, where it is the national dish of the Mandinka and Bambara peoples. Its name comes from the Wolof word “maafe”, which refers to a peanut stew. It spread to Senegal, Guinea and Côte d'Ivoire after peanuts were introduced to West Africa in the 16th century by the Portuguese. The dish pairs a peanut-paste sauce with meat (beef, chicken or mutton) and vegetables, traditionally served over white rice. Find the complete recipe for Senegalese beef mafé on the NKOSI blog.
What do you need to add yourself?
NKOSI no longer sells fresh products: to cook this mafé, have ready meat (beef or chicken, about 800 g to 1 kg for 4 people), vegetables (carrot, cabbage, cassava or eggplant depending on your taste), onion, garlic and cooking oil. Brown the meat, dilute the peanut paste in a little hot water with the tomato concentrate and the stock, add the bay leaves and chilli to taste, then let it simmer for a long time with the vegetables before serving over the rice.
What goes well with it?
The whole range: peanut paste and mafé.
