ORCHIDÉE once-broken rice is a Thai jasmine rice whose grains have been broken once for faster cooking and a soft texture that keeps a bit of bite. It serves as the base for thiéboudienne, chicken yassa or riz gras. 1 kg bag.
What is once-broken rice?
It is a jasmine rice grown in Thailand, whose grains are broken only once during milling. This breaking shortens the cooking time compared with the whole grain, while keeping enough bite to avoid turning to mush, unlike twice-broken rice, with shorter grains and a softer texture, reserved rather for very slow-simmered dishes. Once-broken rice has become established in African grocery shops in France as the base rice used for Senegalese dishes, even though it is not grown in Senegal.
How to use it?
Rinse the rice before cooking. As a guide, allow 1 volume of rice to 1.5 volumes of water or stock, cook over low heat for about a dozen minutes, then let it rest covered for 5 minutes. It goes with thiéboudienne, the Senegalese national fish dish, chicken yassa coated in its lemon and onion sauce, riz gras, or mafé with its peanut sauce.
What to pair it with?
For a finer, stickier rice for porridges, there is ORCHIDÉE twice-broken rice. For a whole, unbroken jasmine rice, there is LOTUS Thai fragrant rice. The recipe for thiéboudienne is on the blog, and the African cereals and grains category brings together the other staples in the catalogue.
