DIEG BOU DIAR double concentrated tomato paste is made from 100% tomatoes, with no other ingredient added. It gives body and an intense red colour to Senegalese and West African simmered dishes. 400 g jar.
What is double concentrated tomato paste?
“Dieg bou diar” means “the one you always need” in Wolof: the name sums up its place in Senegalese kitchens, where this paste features in everyday dishes as well as the great classics. Its ingredient list comes down to one word, tomatoes, with a concentration of at least 28% that gives it its thick texture and its bold taste.
How to use it?
Fry it right at the start of cooking in a little oil with onions and garlic, before adding the other ingredients: the heat brings out its flavour and its colour. One to two tablespoons are enough to enhance a sauce. It is essential in thiéboudienne, mafé and chicken yassa, and is also found in the stews and tomato sauces of West African cooking.
What to pair it with?
To cook a complete thiéboudienne, combine it with the Senegalese thiéboudienne kit and follow the blog's thiéboudienne recipe. For a mafé, the chicken mafé recipe details the steps. The Senegalese cuisine range brings together the rest of the essentials.
