Method

  1. Heat the oil in a large pot and sauté the sliced onions until translucent.
  2. Add the tomato paste, crushed garlic and ginger, mix and cook for 2 minutes.
  3. Pour in the hot water and bring to a simmer.
  4. Dilute the peanut paste with a little of this hot broth until you get a smooth cream, then pour it into the pot, stirring constantly to avoid lumps.
  5. Simmer over low heat for 15 minutes, stirring regularly so the sauce does not stick.
  6. Add the smoked fish or chicken, the dried shrimp and the chili pepper; season with salt and continue cooking for 15 minutes over low heat.
  7. The sauce is ready when a thin layer of oil rises to the surface. Serve with rice, foufou or gari.

The Cameroonian version differs from its Senegalese cousin, mafé, by the frequent use of smoked fish or chicken rather than beef, and by local spices such as ginger and chili pepper.
