JUMBO chicken stock in a 1 kg tub is a powder, not cubes. It is the seasoning for riz au gras, jollof, yassa and everyday sauces in West Africa. The tub makes 50 litres of stock and carries the manufacturer's halal mention.
What is JUMBO stock?
JUMBO is the African brand of the Spanish group GBfoods (formerly Gallina Blanca), which has exported its stocks to Africa since the 1970s. This one is made in Spain. On the tub, you also read "Chicken stock" and "Maraq Digaag", chicken stock in Somali. Many call it "JUMBO cube" out of habit: this item is indeed a powder, in a resealable tub, more convenient for measuring with a spoon. Its taste is salty, rounded, with the trio of flavour enhancers found in commercial stocks (including glutamate).
How to use it?
- As a stock: 20 g of powder per litre of water, according to the manufacturer's guide (1 kg for 50 litres). For half a litre, one spoonful in boiling water, 3 minutes of boiling.
- In a riz au gras or a jollof: a spoonful in the tomato sauce before adding the rice.
- In the marinade for chicken yassa, with onion, lemon and mustard.
It is very salty: taste before adding salt.
What to pair it with?
ORCHIDÉE twice-broken rice and DIEG BOU DIAR double tomato concentrate for riz au gras. In the same range: JUMBO fish stock, smoked shrimp stock and beef stock. The jollof rice and chicken yassa recipes are on the blog. The whole spices and condiments section.
