Method

  1. Wash the okra and cut it into rounds. Sauté it for 5 minutes in a tablespoon of hot oil, until tender. Set aside.
  2. In the same pan, sauté the chopped onion, and the bacon or chicken if using, in the remaining oil until the onion turns translucent.
  3. Add the rice and stir for 1 to 2 minutes to coat it well.
  4. Stir in the crushed tomatoes and the chilli, then moisten with the chicken stock.
  5. Bring to the boil, cover and simmer on low heat for 18 to 20 minutes, until the rice is tender and the liquid absorbed.
  6. Gently stir in the reserved okra, fluff with a fork and adjust the seasoning.
  7. Drizzle with a little lime juice before serving, if desired.

Tips

Blanching the okra briefly, by steaming or pan-frying, before adding it to the rice, rather than cooking it for a long time, limits its slimy texture.

Okra originates in East Africa, between what are now Ethiopia, Eritrea and Sudan. Integrated into the Creole cuisine of the French Caribbean, it became a staple vegetable in Guadeloupe and Martinique.

In the Caribbean, it classically accompanies rice, salt cod or smoked bacon, and rice with okra is most often cooked using the pilaf method: the rice is sautéed for a few minutes before being moistened with stock and cooked covered.
