GARDEL cane sugar is a pure cane brown sugar, made by the GARDEL sugar factory in Le Moule, Guadeloupe. Its golden to brown crystals and light molasses aroma set it apart from refined white sugar. NKOSI offers it in a 750 g bag.
What is GARDEL cane sugar?
The GARDEL sugar factory, founded in 1870, is the last sugar mill still operating in mainland Guadeloupe. It turns the sugarcane delivered by local growers into edible brown sugar, without full refining: this process is what preserves the characteristic colour and aroma of molasses. The only ingredient in this bag is pure cane sugar.
How to use it?
In Caribbean desserts, such as coconut flan, tourment d'amour, tropical fruit jams or rum cake. To sweeten coffee, tea, fresh fruit juice or homemade syrup. In savoury cooking, it adds a caramelised touch to marinades and simmered sauces: use the same proportions as with classic white sugar, adjusting to the taste you want.
What to pair it with?
For comparison, the catalogue also offers LE GALION cane sugar, a brown sugar from Martinique. Head to the Caribbean and Creole cuisine collection to put together your basket of complementary products. In the same department: CRÉOLE FOOD ginger cane vinegar.
