TANTIE peanut paste is a thick, smooth West African peanut butter, made from roasted peanuts, palm oil and salt. It is used mainly to prepare mafé, the West African peanut sauce stew. 500 g jar, made in France.
What is peanut paste?
It is the African equivalent of peanut butter, but designed for savoury cooking rather than a sweet spread. TANTIE's ingredient list shows 99% roasted peanuts from outside Europe, fully hydrogenated palm oil and salt, with no added sugar. The paste is thick, light brown, with a pronounced roasted-peanut taste. It is normal for a little oil to rise to the surface: just stir before use.
How to use it?
For beef mafé or chicken mafé, first mix a spoonful of peanut paste into a little hot stock to avoid lumps, then add it to the tomato and onion sauce with the meat, and let it simmer over low heat until the sauce coats the spoon. It also thickens okra sauces, slips into a Gambian domoda, or is simply spread on bread.
What to pair it with?
Other peanut pastes are available in the catalogue, such as BONMAFÉ peanut paste, or the authentic Senegalese mafé kit to have everything in a single parcel. The peanut paste and mafé range brings together all the shop's references.
