CATALEYA ground pumpkin seed is a fine powder of dried pumpkin seeds, used to thicken sauces and stews from West and Central Africa. 100 g bag, CATALEYA brand.
What is ground pumpkin seed?
These are pumpkin seeds (Cucurbitaceae family) dried then finely ground into powder. In English-speaking West Africa, particularly Nigeria, the term “egusi” is used for pumpkin or melon seeds prepared the same way. The powder has a pale colour and a slightly nutty aroma.
How to use it?
Stir the powder directly into a sauce or stew towards the end of cooking: it thickens quickly, so it is best to add a little at first and then adjust. It goes into Cameroonian ndolé (ndolé leaves, crushed peanuts, shrimp or meat) and Nigerian egusi soup.
What to pair it with?
For a complete ndolé, pair it with NUMBER ONE dried ndolé leaves or the Cameroonian ndolé kit. The detailed recipe is on the blog: Cameroonian ndolé recipe. The okra and sauce thickeners range gathers other African thickeners.
