The Caribbean colombo kit brings together 5 products to cook this creole curry inherited from the French Antilles. It gathers the spice blend, the browning seeds, the chilli, the thyme and the coconut milk; all that is left is to add the oil, onion, garlic, meat or fish and the local vegetables of your choice.
What does the kit contain?
- Colombo SAMIA, 100 g pouch: the spice blend, the base of the dish.
- Browning seeds TONTON CLÉMENT, 100 g pouch: to brown in the oil at the start of cooking.
- Hot bird's eye chilli CHALEUR CRÉOLE, 50 g pouch.
- Whole thyme SAMIA, 50 g pouch.
- Coconut milk GRACE Premium, 400 ml tin: for a creamier sauce.
How to prepare colombo?
Heat a little oil, add a teaspoon of browning seeds TONTON CLÉMENT and let them crackle for 20 to 30 seconds until they release their aroma. Add the meat (chicken, pork, lamb or goat kid) with the onion and garlic, brown it, then sprinkle generously with colombo SAMIA and stir to coat well. Add liquid, add the whole thyme SAMIA and the whole hot bird's eye chilli CHALEUR CRÉOLE (remove it at the end of cooking for controlled heat), and let it simmer over low heat with local vegetables such as potato or aubergine. At the end of cooking, pour in the coconut milk GRACE to bind the sauce, without a strong boil. Serve with white rice.
Where does colombo come from?
Colombo was born from the arrival in the Antilles, in 1862, of indentured labourers from India, largely from the Coromandel coast, who introduced curry after the abolition of slavery. The blend adapted with local spices, and the word “colombo” is thought to come from the Tamil “kulambu”, which refers to a spice blend. The dish is now emblematic of Martinique and Guadeloupe, where the recipes differ slightly from one island to the other. The recipe is on the blog: creole chicken colombo.
