TONTON CLÉMENT browning seeds combine cumin, fenugreek and mustard, to fry briefly in a little hot oil at the start of cooking to flavour Creole colombos and stews. 100 g bag. Contains mustard.
What are browning seeds?
Browning seeds are a whole-spice blend, inherited from Indo-Caribbean cooking, made by TONTON CLÉMENT from cumin, fenugreek and mustard. Browning, or tempering, consists of heating these seeds in a fat so they release their essential oils before the other ingredients are added: a founding step of many Creole dishes of the French Antilles.
How to use it?
Heat a little oil in a pot, pour in a teaspoon of seeds and let them crackle and brown for 20 to 30 seconds while stirring, until they release their aroma. Then add onion, garlic, meat or vegetables to build the dish's aromatic base: this is the starting point for colombos, Creole curries and stews of dried legumes.
What to pair it with?
Browning seeds often come before adding TONTON CLÉMENT colombo powder to the same pot, or go alongside a legume such as TERSOL Cape peas. Find the recipe for Creole chicken colombo on the blog, or the whole Caribbean and Creole cuisine range.
