What is colombo?
Colombo is a spice blend that originated in the French Caribbean, inherited from the curry brought over by indentured Indian labourers in the 19th century. TONTON CLÉMENT powder, made in Guadeloupe, combines coriander, rice, turmeric, cumin, mustard, fenugreek, pepper and cloves: turmeric gives it its golden yellow colour, fenugreek its slightly bitter note.
How to use it?
Brown your pieces of chicken, pork or fish with onion and garlic, sprinkle generously with colombo, then add water or stock and simmer gently with local vegetables such as chayote or potato. At the end of cooking, add a dash of lemon or tamarind juice, and serve hot with white rice.
