Colombo SAMIA is a Caribbean spice blend made with turmeric, cumin, coriander and curry, used in Creole cooking for chicken, pork, lamb and local vegetables. 100 g pouch. Contains mustard.
What is colombo?
Colombo is a spice blend born in the French Caribbean, inherited from the curry brought by indentured Indian workers in the 19th century. Its golden colour comes from turmeric; it also combines cumin, coriander, fenugreek, garlic, cloves and star anise. Colombo SAMIA also contains mustard, a regulatory allergen.
How to use it?
Brown pieces of chicken, pork or lamb in a little oil, sprinkle generously with colombo, stir to coat the meat well, then add a little stock and let simmer over low heat. Local vegetables such as chayote or aubergine can be added during cooking. Allow one to two tablespoons for a whole pot.
What to pair it with?
Colombo goes well with CHALEUR CRÉOLE bird's eye chilli to spice up the dish, and with ROYAL BOURBON Creole-style red beans as a side. For the recipe, head to the NKOSI blog's chicken colombo, or the Caribbean and Creole cuisine section.
