Ingredients

Forservings

Mushroom infusion

  • Dried djon djon mushrooms, about 125 g
  • Hot water, about 1.2 litres (5 cups)

Rice and legumes

Aromatics

To serve, optional

  • 100 g peeled shrimp, or 50 g diced salted pork
  • Oil, 4 tablespoons

Method

Preparing the mushrooms

  1. Rinse the dried djon djon mushrooms, then soak them for 30 minutes in hot water.
  2. Blend the mushrooms with their soaking water, then strain through a fine sieve to collect the fragrant black water. Discard the solids.

Peas, if using dried pigeon peas

  1. The day before, soak the dried pigeon peas overnight in cold water. Drain them, then cook for about 45 minutes in water until tender. Frozen peas need no prior preparation.

Cooking

  1. In a saucepan, heat the oil and, if using, brown the salted pork for a few minutes.
  2. Add the sliced shallot and garlic, and sauté for 2 to 3 minutes.
  3. Stir in the pre-cooked or frozen peas, and the shrimp if using.
  4. Pour in the strained mushroom water, add the thyme, ground cloves, whole pepper, salt and pepper. Bring to the boil.
  5. Add the rinsed rice, stir, cover and cook over low heat for about 20 minutes, until the rice has absorbed all the liquid and is fully cooked.

Serving

  1. Remove the whole pepper before serving. Serve with meat, fish or vegetables, according to family tradition.

Tips

Dried pigeon peas need soaking followed by pre-cooking; frozen peas make things quicker, without changing the final result.
