ESPIG tajine spices are a Moroccan powder blend of turmeric, ginger, cinnamon, mace, onion, ground coriander, white pepper, nutmeg, cardamom, sweet pepper and cloves, designed for stewed meat or vegetable dishes. 100 g pouch.
What is this blend?
It is an assembly of eleven ground spices, with no added salt according to the ingredient list, made by the ESPIG house, a brand of the CEPASCO group founded in 1876 and based in Gémenos, near Marseille, since 1992. Its aromatic profile, dominated by turmeric, ginger and cinnamon, recalls the blends used in Morocco for tajine, without reproducing a single recipe: every family and every spice house has its own.
How to use it?
Coat the meat, poultry or vegetables with the spice before browning them in olive oil, then let them simmer over low heat with onions and a little water or stock. Allow about one to two teaspoons for four people, to adjust to taste. This blend suits chicken tajine, stewed lamb, vegetables, as well as couscous.
What to pair it with?
With SAMIA tajine spices to compare two Moroccan blends, or by following the blog's Moroccan tajine recipe or kefta tajine recipe. The whole Moroccan and Maghreb cuisine range is gathered in one collection. In the same range: ESPIG yassa spices.
