EPICÉO paprika is a powder of sweet pepper (Capsicum annuum), dried and ground, bright red, without a strong heat. It adds colour and a mild aroma to meats, sauces and stews. 100 g bag.
What is paprika?
Paprika, also called ground sweet pepper, is obtained by drying then grinding sweet peppers. Unlike smoked paprika, it is not passed through a smokehouse: its flavour stays round and slightly fruity, with no smoky note. It is a universal cooking spice, used as much in African dishes as in European cuisines.
How to use it?
Sprinkle it over meats, poultry or fish before searing or roasting them, for a lovely golden colour. It also goes into sauces, stews, rice and marinades. Add it during or at the end of cooking, or mixed into a little warm oil: too high a dry heat browns it and makes it lose its mildness.
What to pair it with?
With SAMIA ground cumin, SAMIA ground turmeric and ESPIG ground coriander to make a tagine or a marinade. The kefta tagine recipe is on the blog. The whole range: spices and condiments.
