ESPIG ground coriander is a pure spice made from dried, ground coriander seeds, with no other ingredient. It flavours tagines, couscous, marinades and stews with a warm, slightly lemony taste. 100 g pouch.
What is ground coriander?
Ground coriander is the powder obtained by grinding the dried seeds of the Coriandrum sativum plant. It is different from fresh coriander, which is the leaf of the same plant and is sold as an aromatic herb. Its taste is warm, slightly lemony and a little peppery, milder than cumin. It is a staple spice of Moroccan and Maghreb cuisine, notably in tagine and couscous spice blends. This ESPIG pouch, a brand of the CEPASCO group founded in 1876 and based in Gémenos, near Marseille, since 1992, contains only coriander.
How to use it
Add the ground coriander during cooking, in the hot oil at the start of a tagine or a stew, so it releases its aroma. One teaspoon is enough for four people in a sauce or a meat or chicken marinade, combined with cumin and turmeric. It also lifts lentils, soups and sautéed vegetables at the end of cooking.
What to pair it with
With SAMIA ground cumin and SAMIA ground turmeric to make a homemade tagine blend, or directly with ESPIG couscous spices. The Moroccan tagine recipe is on the blog. The whole range is in African and Caribbean spices and condiments.
