Origins and cultural history of nyama choma

Nyama choma is a dish of meat grilled over a wood or charcoal fire, its name literally meaning "grilled meat" in Swahili (nyama: meat, choma: grilled). This practice goes back to the pastoral communities of East Africa, notably the Maasai, the Kikuyu and the Kalenjin of Kenya, who raised cattle, goats and sheep and grilled their meat over an open fire.

Having become Kenya's national dish, nyama choma spread to Tanzania and Uganda. It is traditionally eaten around a fire, in specialised grill houses, where the meat is cut and shared by hand among guests: as much a social occasion as a meal.

What are the essential ingredients of nyama choma

The preparation of nyama choma relies on a simple marinade that brings out the flavour of the meat before grilling over the fire.

  • goat or beef, cut into pieces with the bone
  • lime and garlic
  • fresh ginger
  • cumin and paprika
  • salt, pepper and chilli

What is nyama choma traditionally served with?

Nyama choma is most often served with ugali, Kenyan maize dough, and kachumbari, a raw salad of tomatoes, onions and sometimes fresh coriander, which brings acidity to balance the richness of the grilled meat.
