The NKOSI Senegalese chicken yassa kit brings together 4 products to prepare yassa, a specialty from southern Senegal made with chicken marinated in lemon and onions. It contains the seasoning, mustard, rice and chilli needed for the recipe; the chicken, lemon and onions are left to add.
What's in the chicken yassa kit?
- 1 MAGGI seasoning, 160 mL
- 1 CRÉOLE FOOD creole mustard, 200 g
- 1 ORCHIDÉE 1-time broken rice, Thai jasmine rice, 1 kg
- 1 SAMIA ground hot chilli, 100 g
What is yassa?
Yassa is a specialty of the Diola people, born in Casamance, a region of southern Senegal around Ziguinchor. Its name is said to come from Casamance creole and to mean “to fry”. The meat or fish is marinated, traditionally overnight, in lemon juice with sliced onions, mustard, garlic, salt and pepper, then seared before simmering for a long time in that same marinade until the onions become soft. Chicken is the most common version, but the dish is also prepared with fish, beef or lamb. Find the complete recipe for Senegalese chicken yassa on the NKOSI blog.
What do you need to add yourself?
NKOSI no longer sells fresh products: to cook this yassa, have ready chicken (about 1 kg for 4 people), plenty of onions, 2 or 3 lemons, garlic and cooking oil. Marinate the chicken for several hours in lemon, sliced onions and mustard, sear the meat, then let the onions stew down with the seasoning and chilli until you get a soft sauce, before bringing it all together and serving over the rice.
What goes well with it?
