ROLLI double concentrated tomato paste contains only one ingredient: tomatoes, concentrated to at least 28% dry extract. With no salt added, it colours and thickens jollof rice, mafé, stews and tomato sauces. 440 g tin, made in France.
What does "double concentrated" mean?
Most of the water has been removed from the tomato: at least 28% dry extract remains, against about 22% for a simple paste. Less is therefore needed to colour and flavour a sauce, and it dissolves easily in water or stock.
How to use it?
Fry one or two tablespoons of paste in hot oil with the onions, before adding water or stock: this step softens the acidity and darkens the colour. It is the base of jollof rice, thiéboudienne and many sauces. Once the tin is open, transfer the rest into a closed container in the fridge.
What to pair it with?
With BONMAFÉ peanut paste for mafé, a JUMBO fish stock cube and ORCHIDÉE broken rice. The other sauce bases are in the sauces and pastes range.
