Ingredients

Forpeople

Cod

  • 900 g dried salted cod

Vegetables and seasoning

Method

Desalting, the day before or 2 hours ahead

  1. Rinse the cod in cold water to remove the surface salt.
  2. Cover it with cold water and leave to soak in the fridge for 12 to 24 hours depending on thickness, changing the water three or four times (this soaking time is not counted in the cooking time).

Preparation

  1. Drain the cod, remove the skin and bones, flake the flesh into pieces.
  2. Cut the potatoes into pieces, slice the onion and peppers, crush the garlic.

Cooking

  1. Heat the olive oil and sauté the onion for 3 minutes.
  2. Add the garlic and peppers, cook for 5 minutes.
  3. Stir in the tomatoes and olives, cook for 2 minutes.
  4. Add the cod and potatoes, pour in the tomato sauce and water, season lightly with salt and pepper (the cod remains salty).
  5. Leave to simmer for 45 minutes to 1 hour, until the potatoes are tender and the sauce has thickened.

Serving

  1. Sprinkle with fresh coriander before serving, with white rice.

Tips

The quick desalting method, a 30 minute soak then 20 minutes of boiling in fresh water, works when time is short, but gives a slightly saltier cod.

Origins and cultural history of bacalao guisado

Bacalao guisado pairs salt cod, introduced to the Spanish-speaking Caribbean during the era of Spanish colonisation, with local vegetables simmered in tomato. In the Dominican Republic, it is among the traditional Lenten dishes, but is eaten all year round; it is just as common in Puerto Rico.

Depending on the family and the country, it is prepared entirely in a single pot, with the potatoes included in the sauce, or the desalted cod is served over root vegetables boiled separately, with simpler seasoning.

Frequently asked questions about bacalao guisado

Do you need to desalt the cod before cooking it?

Yes: salt cod is rinsed and then soaked in cold water, in the fridge, for 12 to 24 hours depending on the thickness of the pieces, changing the water three or four times. A quicker, less thorough method is to boil it for 20 minutes in fresh water, after an initial 30 minute soak: taste a piece before salting the dish.

Is bacalao guisado the same dish in Puerto Rico and the Dominican Republic?

The principle stays the same: cod simmered with tomato, onion, pepper and olives. The Puerto Rican version often cooks the potatoes directly in the sauce with a spiced sofrito, while the Dominican version sometimes serves the cod over root vegetables boiled separately, with simpler seasoning.
