Frequently asked questions
How do I make a kinkeliba infusion?
Allow a small handful of leaves per litre of water. Bring to the boil for a few minutes, leave to steep, then strain. In Senegal it is drunk hot and sweet. Our kinkeliba guide tells you more.
What is the difference between red and white bissap?
It is the same plant, hibiscus, in two varieties. Red bissap gives a deep purple, tangy juice; white bissap, with pale flowers, gives a clear juice. Our article on red or white bissap explains how each is used.
How is ataya tea made?
Gunpowder green tea, such as 555, steeps for a long time with sugar and mint. It is then poured from high up, from one glass to another, to make the foam. It is served in three rounds, from the strongest to the sweetest.
