BARKELOU Touba coffee is a traditional spiced coffee from Senegal, a blend of roasted Robusta coffee and ground Guinea pepper, djar. NKOSI sells it in a 250 g bag.
What is Touba coffee?
Touba coffee takes its name from the holy city of Touba, in Senegal, where it is associated with the Mouride brotherhood and its founder Cheikh Amadou Bamba. It consists of roasted and ground Robusta coffee with added Guinea pepper (Xylopia aethiopica), a spice called djar in Wolof, sometimes joined by cloves depending on family recipes. The BARKELOU version sold by NKOSI, made in Senegal, blends 70% Robusta coffee and 30% djar, which gives it that warm, slightly peppery taste that sets it apart from a classic coffee.
How to prepare it?
In the Senegalese way, the grounds are brewed like a filter coffee, or left to infuse for a few minutes in simmering water before straining. Count about one teaspoon per 10 cl of water. Serve it piping hot, sweetened to taste, alone or among friends and family as tradition has it. Keep the bag closed, away from heat and moisture, to preserve its aromas.
