Method

  1. Cook the meat with the onion, garlic, ginger, salt and stock cube in about 75 cl of water, until tender, about 30 minutes. Set aside 50 cl of the cooking broth.
  2. Meanwhile, dissolve the djoumblé in a little warm water for 10 to 15 minutes to rehydrate it.
  3. Add the flaked smoked fish and the ground dried shrimp to the reserved broth, and let simmer for 5 minutes.
  4. Stir in the palm oil and let simmer for another 5 minutes.
  5. Add the rehydrated djoumblé and the chili, then cook for 10 to 15 minutes over medium heat, stirring, until the sauce becomes stringy and coats the back of a spoon.
  6. Serve hot with white rice, fufu or gari.

Tips

Djoumblé is rehydrated separately, in a little warm water, before being added to the sauce: this avoids lumps and gives it time to regain its stringy texture.

Origins and cultural history of djoumblé sauce

Djoumblé refers to dried okra, an ingredient used as a thickener in several West African and Central African cuisines. In Cameroon, djoumblé sauce combines this dried okra with meat or smoked fish and red palm oil, in a preparation with the stringy texture characteristic of okra once rehydrated. The same word, sometimes spelled “djoumgblé”, also refers to a dish and the ingredient that makes it up among the Baoulé people of Côte d’Ivoire, a sign of how this preparation has travelled between several African cuisines.

It is an economical, popular dish, commonly prepared in Cameroonian households as one of the everyday sauces served with a starch.
