Preparing the chicken

  1. Cut the chicken into pieces, season with salt and pepper.
  2. Brown the pieces in a little hot oil, then set them aside.

Preparing the sauce graine

  1. Pour the sauce graine into the pot used for the chicken and thin it with water, little by little, until you get the consistency of a sauce.
  2. Add the sliced onion, tomato and bay leaf, and simmer for 15 to 20 minutes over medium heat: the red oil then rises to the surface.

Cooking the chicken moambe

  1. Put the chicken pieces back into the sauce and add the chili pepper to taste.
  2. Cover and simmer over low heat for about 45 minutes, until the chicken is fully cooked and the sauce has thickened.
  3. Adjust the salt at the end of cooking.
