Raw, roasted or fresh peanut: what is the difference?
Raw peanut is a dried peanut that has not yet been roasted: its taste is neutral, its texture firm, and it is cooked before being eaten. Roasted peanut is ready to snack on. How to use them?
- Roasted: dry, in a pan or in the oven, stirring, until golden. Salt afterwards if you like.
- As homemade peanut paste: roast them, let them cool, then blend for a long time until you get a paste. This is the base of mafé and peanut sauces.
- In cooking: crushed into a leaf sauce, sautéed with vegetables or poultry.
- In confectionery: nougats and peanut caramel brittle.
What to pair them with?
