Kinkeliba is the breakfast infusion in Senegal: dried leaves of Combretum micranthum, left to steep in hot water and then sweetened to taste. This RACINES bag contains 30 g of whole leaves, grown and packed in Senegal, certified organic.
What is kinkeliba?
A Sahel shrub whose leaves are harvested, then dried in the sun. It is called séréo or sexo in Wolof, talli in Fula, ngolobé in Bambara. Kinkeliba is drunk in the morning with bread, at the end of a meal, or in the evening to break the fast during Ramadan. Its taste is plant-like, slightly bitter and tannic.
How to prepare it?
The bag suggests a good handful of dried leaves per litre of water. Pour the leaves into simmering water, let it steep, strain, then sweeten to taste. It is drunk hot or cold. Some families add a few bissap flowers, a clove or some mint.
What to pair it with?
With red bissap TANTIE for a more colourful infusion, or sweet mint SAMIA. All infusion plants are in the teas and infusions section.
