Kankan, or kankankan, is a powdered spice blend used to season grilled meat: skewers, choukouya, braised chicken. This 100 g CATALEYA bag comes from Côte d'Ivoire.
What is kankan?
A blend born in the Hausa tradition, in Niger and northern Nigeria, where it is called yaji and seasons suya, beef skewers grilled over a wood fire. It has spread to Côte d'Ivoire, Mali, Guinea, Cameroon and Senegal. Its recipe varies by manufacturer: chilli, ginger, spices, and very often roasted peanut.
How to use it?
Rub or generously sprinkle the raw meat before grilling it, on the barbecue, in a pan or in the oven: beef, chicken, lamb, skewers. It is also sprinkled straight off the fire, with raw onions and tomatoes, as with suya. This is not the spice used for mafé or yassa, which rely on different bases. The recipe for suya skewers is on the blog.
A note on peanuts
Kankan blends often contain peanut, a major allergen. Read the ingredient list printed on the bag before buying or serving it if you or a guest are allergic.
What to pair it with?
With SAMIA ground hot chilli to add more heat, or ground ginger. All the spices are in the spices and condiments range. In the same range: NKOSI ground kankan.
