CHALEUR CRÉOLE cod acra mix is a ready-to-use powder blend: dehydrated cod is already included at 12%, along with flour, vegetables and spices. Simply dilute it in water then fry it into small golden balls. 100 g bag.
What are cod acras?
Acras (or accras) of cod are fried fritters made from salt cod, an iconic dish of the French Caribbean, Martinique and Guadeloupe, served as an aperitif or starter both for celebrations and everyday meals. This CHALEUR CRÉOLE mix reproduces the recipe as a ready-to-use powder: wheat flour, dehydrated cod, onion, potato, powdered egg, garlic, parsley and cayenne pepper are already combined in the bag, with no need to add any fish.
How to use it?
Dilute the contents of the bag in about 140 ml of cold water, leave to rest for 5 minutes, then stir again to get a smooth batter. Heat the frying oil to 180°C, drop small spoonfuls (about half a teaspoon) into the hot oil, let them turn golden while turning the acras, then drain on absorbent paper. Serve hot, as an aperitif or starter, with a squeeze of lime or a hot sauce.
What to pair it with?
To vary your acras, try the CHALEUR CRÉOLE shrimp acra mix, or serve the cod ones with a DAME BESSON strong Creole sauce. The full recipe for Caribbean cod acras is on the blog. Find more products in the Caribbean and Creole cuisine range.
