DAME BESSON hot créoline sauce is a Caribbean sauce made from onions and Caribbean chillies, the full-bodied version of the brand's original créoline. It enlivens grilled dishes, meats, fish and accras with just a few drops. 170 g jar.
What is hot créoline sauce?
Créoline sauce is a traditional condiment of the French Caribbean, born in Guadeloupe from the recipes of Dame Henri Besson, a cook from Sainte-Rose. Since 1978, the Dame Besson brand, now owned by Domaine de Séverin, still makes it in Guadeloupe and distributes it in Martinique, French Guiana and the Northern Islands. The “hot” version contains more Caribbean chillies than the brand's original or mild créoline: the maker rates it level 2 on its heat scale.
How to use it?
A few drops are enough: place it at the edge of the plate or add it at the end of cooking. It goes with cod accras, grilled dishes, grilled meats and fish, rice, colombo, local vegetables, Caribbean blood sausage and fried fish. Used in a marinade, use it sparingly: its heat concentrates during cooking.
What to pair it with?
For a full accras platter, pair it with the blog's Caribbean cod accras recipe. If you prefer a milder heat, the brand also offers the DAME BESSON mild créoline sauce and the DAME BESSON original créoline sauce. The Caribbean and Créole cuisine aisle gathers the rest of the essentials.
