Turmeric powder NUMBER ONE is a rhizome of Curcuma longa, dried and then ground, with a deep orange-yellow colour. It colours and flavours the rice, sauces and stews of West African cuisine. 100 g bag.
What is turmeric?
Turmeric is the rhizome of a plant in the ginger family, Curcuma longa, dried and then ground to a fine powder. It is also known as Indian saffron, or in French as terre-mérite, two well-established alternative names, not to be confused with true saffron, which comes from a flower and is far rarer. Its orange-yellow colour comes from curcumin; its flavour is earthy, slightly peppery, and turns bitter if too much is used.
How to use it?
One teaspoon is enough for a family dish. Add the turmeric right at the start of cooking, in a little oil, to release its colour and aroma before adding the other ingredients. In West Africa, it colours yellow rice (riz gras), cooked in a spiced broth. It also goes into sauces, stewed chicken or fish dishes, marinades and lentil soups.
What to pair it with?
Turmeric pairs well with ginger powder NUMBER ONE in marinades and curries. Find the recipe for African riz gras to use it in a complete dish, or browse the African and Caribbean spices and condiments range to complete your cupboard. In the same range: Turmeric and ginger infusion BIO PROPHYTAMINE.
