Tips

Cassareep acts as a natural preservative: a pepperpot prepared the day before and brought back to a boil develops richer flavors the next day (CaribbeanPot.com, Foreign Fork).
Going further: history, variations, sides and tips

In brief

  • Pepperpot is a meat stew slowly simmered in cassareep, a black bitter cassava syrup
  • Origin: Guyana, from an Amerindian preservation method
  • Key ingredients: meat, cassareep, cinnamon, clove, Caribbean chili, garlic
  • A dish for special occasions, traditionally served for breakfast on Christmas morning

Origins and cultural history of pepperpot

Pepperpot comes from the Amerindians of Guyana, who devised it as a way of preserving meat before refrigerators existed. Its base, cassareep, is a thick black syrup obtained by boiling the juice extracted from grated bitter cassava with sugar: this juice acts as a natural preservative, which in the past allowed the stew to be kept for several days simply by reheating it each day.

Pepperpot is now one of Guyana's national dishes, alongside chicken curry and cook-up rice. It is traditionally prepared for Christmas and served in particular for breakfast on the morning of December 25, often made the day before so the flavors can develop overnight.

What are the key ingredients of pepperpot

Pepperpot slowly simmers meat in cassareep, with whole spices that infuse the sauce during cooking.

  • meat (beef, sometimes supplemented with pork or mutton)
  • cassareep
  • cinnamon stick and cloves
  • whole Caribbean chili
  • garlic and onion
  • thyme and brown sugar

What to know about pepperpot

Pepperpot is a stew of beef, sometimes with pork or mutton, simmered for a long time in cassareep, a black syrup made from bitter cassava that gives it its dark color and characteristic taste. Cinnamon, cloves, whole Antillean chili pepper, garlic, onion, thyme and brown sugar go into the pot. One of the national dishes of Guyana, it is prepared for Christmas and traditionally served at breakfast on the morning of December 25, often cooked the day before.

Frequently asked questions about pepperpot

Does Guyanese pepperpot really need cassareep?

Yes: cassareep gives pepperpot its dark color and characteristic taste, and also acts as a natural preservative for the meat. Without it, the dish loses its identity and becomes closer to an ordinary spiced meat stew.

How long does pepperpot keep?

Thanks to the cassareep, a well-prepared pepperpot can be kept for several days at room temperature provided it is brought to a boil every day, a traditional practice inherited from its role as a preservation dish; in the refrigerator, this daily precaution is no longer necessary.
