Method

The chicken

  1. Brown the chicken in the butter with the chopped onions, 5 minutes.
  2. Add the parsley, coriander, ginger, cinnamon, saffron (or turmeric), salt and pepper. Cover with water and simmer for about 30 minutes, until the meat comes off the bone easily.

The eggs and shredding

  1. Drain the chicken, keeping the broth. Debone it and shred the meat.
  2. Reduce the broth over high heat for a few minutes, then pour in the beaten eggs and let them set while stirring gently, about 8 minutes, until you get a scrambled egg texture.

The almonds

  1. Toast the almonds dry in a pan, 5 minutes, then coarsely chop them.
  2. Mix them with the icing sugar, cinnamon and orange blossom water.

Assembly and baking

  1. Butter a round tin and arrange the buttered brick pastry sheets in a fan, letting them overhang the edge.
  2. Spread half of the almonds over the bottom, add the shredded chicken then the scrambled eggs, and finish with the rest of the almonds.
  3. Fold the brick pastry sheets over the filling to close the pastilla.
  4. Bake in the oven at 180°C for about 27 minutes, until the pastilla is golden and crisp.
  5. As it comes out of the oven, dust generously with icing sugar and cinnamon.
