Method

  1. Cut the smoked bacon into small pieces. Fry it dry in a large casserole dish for 5 minutes, until it renders its fat.
  2. Add the sliced onion, garlic and chives. Sauté for 5 minutes with the oil.
  3. Wash and roughly chop the spinach. Add it to the casserole dish and let it wilt for 5 minutes.
  4. Cut the okra into rounds and stir them in.
  5. Add the water or stock. Add the bouquet garni and the whole chili pepper. Season lightly with salt, add pepper. Cover and simmer for 20 minutes.
  6. Add the crabs or crab meat. Cover and simmer for another 15 minutes.
  7. For a smoother texture, blend the stew with an immersion blender, leaving the crab pieces whole if you are using shell-on crabs.
  8. Add the lime juice just before serving. Serve hot with white rice.

Tips

Fresh okra makes the stew slightly stringy as it cooks: this is normal and part of calalou's traditional texture.

Origins and cultural history of calalou

The word calalou is thought to come from the Kimbundu kalulú, which refers to okra or a vegetable dish in Angola. It arrived in the Caribbean with the slave trade and the cuisines of West and Central Africa, then took on its own form through contact with island ingredients. The dish is today one of the national dishes of Trinidad and Tobago and Dominica.

In the French Antilles, the recipe varies from one family to another: plain, with salted meat, or with crab for special occasions. The base always stays the same, green leaves simmered for a long time with okra, until a thick, smooth soup is obtained.
