Frequently asked questions

Where can I buy African potash for cooking?

NKOSI sells NUMBER ONE food-grade potash in a 100 g bag and ships it from the Paris area within 24 to 72 working hours, to mainland France (2 to 3 working days) and to ten European countries. The minimum order is 39 €: in France, delivery to a pickup point is then free, and home delivery is free from 69 €.

What is potash used for in African cooking?

To tenderise. A pinch dissolved in the cooking water softens okra, cassava leaves or Guinea sorrel, keeps their green colour and enhances the sticky texture of sauces. With beans and black-eyed peas, it shortens the cooking time. It adds no flavour: it is not a seasoning.

How do you use food-grade potash?

Dissolve a pinch in a little water, then pour this water into the pot, at the start of cooking the vegetables or beans. A pinch is enough for a family-sized sauce: it is a concentrated product, never measured with a spoon.

Kanwa, akanwu, kaun: is this the same thing as potash?

Yes. These are the Nigerian names for cooking potash: kanwa in Hausa, akanwu in Igbo, kaun in Yoruba. It is an alkaline mineral salt, harvested from deposits or obtained from plant ashes depending on the region, whose exact composition varies with the origin.

Is food-grade potash dangerous?

It has long been used in very small amounts, dissolved in the cooking water. It is not a product to consume by the spoonful. If you need to limit salt or have kidney disease, ask your doctor for advice. Keep the bag out of the reach of children.
