LEGUMOR pink beans are dried beans mottled with pink and red, originating from Canada, sold in a 1 kg pouch. Soaked and then boiled, they turn tender in stews, as a side to rice or in legume salads.
What is the pink coco bean?
The pink coco, or pink bean, is a dried bean from the common bean family (Phaseolus vulgaris), with a mottled grain close to the borlotti bean. It should not be confused with the pink coconut, a decorative coconut variety, much rarer and unrelated to this bean. The LEGUMOR pink beans sold by NKOSI carry the label "Origin: Canada" on the pouch.
How to prepare it?
Soak the pink beans for several hours before cooking, then rinse them. Then allow 1 h 30 to 2 h at a gentle simmer, or 20 to 30 minutes in a pressure cooker, until the grain is tender. Add salt at the end of cooking to keep them soft. They go with rice, turn into a stew with onion, tomato and spices, or go into a Malagasy dish of beans with coconut.
