EPICÉO ground molokia is a powder of dried, ground jute mallow leaves (Corchorus olitorius), also called mloukhia, molokheya or mulukhiyya. It is used to prepare mloukhia, a slow-cooked dish from the Maghreb and the Middle East with a thick, stringy texture. 100 g bag.
What is molokia?
Molokia is the dried, then ground leaf of jute mallow, a plant of the Malvaceae family also called jute. Depending on the country, it is found under other names: mloukhiya in Tunisia, Algeria and Egypt, ewedu among the Yoruba of Nigeria, ademe in Togo, kplala or kolala in Ivory Coast, and moroheiya in Japan. In Haiti, the Creole lalo also refers to this same plant, not to be confused with Senegalese lalo (baobab leaf powder), which NKOSI also sells. Its taste, strong, sits between sorrel and spinach.
How to use it?
Dissolve the powder in a hot meat or chicken broth, stirring well to avoid lumps. Let it simmer for a long time, several hours for the Tunisian version, seasoning with garlic and coriander. Molokia can also simply flavour sauces for beef, rabbit, chicken or rice. Serve with bread or rice.
What to pair it with?
With ESPIG ground coriander and SAMIA garlic powder, two classic ingredients of mloukhia. The whole range: spices and condiments.
