ESPIG ground molokheya is a powder of jute mallow (corchorus) leaves from Egypt, with a taste close to spinach and sorrel. It is used to prepare molokheya, an Egyptian dish in a smooth broth. 100 g bag.
What is molokheya?
Molokheya, also spelled meloukhia or moulokhiya, is a herb called corète potagère in French and jute mallow in English. Once its leaves are dried and ground, as in this ESPIG bag (a brand of the CEPASCO group, founded in 1876), it gives an olive-green powder with a strong taste, between sorrel and spinach. The dish of the same name, very popular in Egypt, is also found in the Maghreb and the Near East in local variants.
How to use it?
Dissolve the powder in a hot meat, rabbit or chicken broth, whisking to avoid lumps, then let it simmer over low heat until you get a smooth consistency. Flavour with fried garlic and coriander, and serve with rice. Molokheya traditionally accompanies chicken, rabbit or beef.
What to pair it with?
With SAMIA ground molokheya or EPICÉO ground molokia to compare brands, both sold in 100 g. All the African and Caribbean spices and condiments are gathered in the same collection.
