What is pois du Cap?
Pois du Cap is the Réunion Island and Mauritian name for the lima bean (Phaseolus lunatus), a broad, flat and creamy legume, native to Central and South America and now grown throughout the tropics. It is also known as Cape bean. It is a staple of Malagasy stews and a classic “bean” of Réunion Island and Mauritian cuisine, served with rice, cari or rougail. This ROYAL BOURBON version is plain: only pois du Cap, water and salt, with no added oil or spice.
How to use it?
Drain and rinse the beans before adding them to your dish. They go well with a Malagasy dish of mashed cassava leaves, ravitoto, simmered with meat, garlic and ginger, or with a Réunion Island cari. You can also simply reheat them with an onion and mild spices, or serve them as a stew with white rice.
