Uses of peanut paste in West African cooking
Mafé is a stew originating from Mali, eaten in particular by the Mandinka peoples of Mali and Senegal: its name comes from the Wolof “maafe”, which refers to a dish prepared with a peanut sauce. Peanut paste, diluted and then simmered with tomatoes and onions, forms its base; mafé is traditionally served with white rice in Senegal, and with fonio in Mali. For the full recipe, head to our article Senegalese chicken mafé, chicken in creamy peanut sauce.
What to pair it with?
The whole range: peanut paste and mafé.
