The Ya Goma NUMBER ONE bean is a dried bean, named after Goma, the city in North Kivu, in the Democratic Republic of the Congo, through which it transits before being distributed. Soaked and then simmered in tomato sauce, it makes madesu, a Congolese family dish served with rice or foufou. 900 g bag.
What is the Ya Goma bean?
A dried bean sold under the name of its collection and transit region, Goma, in North Kivu. These beans are transported from the east of the Democratic Republic of the Congo to Kinshasa and are widely eaten in urban areas for how easily they cook. They are also called madesu ya Goma in Lingala and Kikongo.
How to prepare madesu?
- Soak the beans for several hours, ideally overnight.
- Drain, cover with fresh water and cook until very tender.
- Fry onion, garlic and tomato in a little palm oil, add the cooked beans and simmer until the sauce thickens.
Madesu is served with rice, plantain, foufou or chikwangue.
What to pair it with?
For the sauce, MAMA FUTA red palm oil brings the traditional colour and flavour. Serve with ORCHIDÉE broken rice, or discover other products in the NKOSI Congolese grocery.
