NUMBER ONE djouka is a precooked fonio-based mix, prepared for djouka, a traditional dish from Mali. It is ready in a few minutes steamed or in hot water, then served hot with a sauce or meat.
What is djouka?
Djouka, or diouka, is a Malian dish made from steamed fonio and peanut powder, sometimes with okra or food-grade potash added to bind the preparation. NUMBER ONE sells the precooked version, ready to rehydrate quickly. Fonio is not one of the regulated gluten-containing cereals.
How do you use it?
Pour the precooked djouka into hot water, or steam it for a few minutes, until the liquid is fully absorbed, then fluff it with a fork. Serve hot, drizzled with a peanut sauce or a palm nut sauce, or alongside fish and simmered meat.
What goes well with it?
For the accompanying sauce, TANTIE peanut paste works well, and plain NUMBER ONE precooked fonio completes the range. The blog has two articles on it: the story of djouka, peanut fonio and the step-by-step djouka recipe. Malian cuisine has its own section.
